Vegetable soup

The house is filled with the aroma of home made vegetable soup.  I love to make a huge pot and then pour leftovers in containers to freeze for later.  Soup is great with home made bread for lunch.  It's a bit of a change from cold salads and sandwiches.  Here is my recipe

1 can of diced tomatoes [regular size]
3 tablespoons tomato paste
half a head of cabbage shredded [I use rest for Cole slaw later]
1 zucchini cut up and sliced with skin on
half of an onion diced
3 cloves of garlic diced
vegetables varies due to what I have on hand.  Sometimes, carrots, or mixed frozen vegetables  I throw in about a cup full
one cup of cut up chicken
4 bouillon cubes
6 cups of water
salt, pepper, oregano, basil to taste

throw it all together and let it boil, then simmer for a few hours.  I sometimes look in my fridge to see if I have a little of this or that.  For example, I had a small serving of left over chili I threw in.  Cooking for me is an experiment every time.
