Breakfast Gingerbread

Here is a recipe that I seldom measure right.  Funny, it always comes out good.  The gingerbread is like the consistency of brownies.  Tastes great for breakfast with tea, coffee or even as a snack.

1 3/4 cup flour
1 cup oil
1/2 cup brown sugar
1 tsp cinnamon
1 tsp ginger
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup molasses 

Bake at 350 degrees for about 15 minutes.  With this recipe, check the consistency of batter.  If it is too stiff [as I sometimes add too much flour]  add a bit of water.  Also, ovens vary so I check the oven.  The mix will be done when a knife stuck in the middle comes out clean.
