It's that time of year again when we want to wake up to the wonderful smells of Autumn. I love muffins! The only problem is that I do not make them a lot, and when I want one...I have no fruit in the house. Here is a recipe that can be made up quick with any sort of jam that you might have available.
2 Cups of flour
1 cup sweetner [artificial sweetner, Stevia, or sugar]
1 tsp. baking soda
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
2 eggs
1/2 cup virgin olive oil
1/2 cup buttermilk
1/2 cup jam...orange marmalade, strawberry, peach...etc
mix it up and pour into 12 greased muffin cups
bake at 375 degrees for 12-15 minutes
oven temperatures vary so you might want to check muffins after ten minutes
I take half of the batch and freeze them because it's just hubby and me...but this works well for a big family.

If you do not have buttermilk...I use 1/2 cup milk with a tsp. of lemon juice.
