Easy Chicken Jambalaya with Canned Chicken


It is a breezy warm day here in sunny Florida. I enjoyed the sun all morning. So, what am I doing now? I am making Chicken Jambalaya! I looked over several recipes and came up with my own. My husband had it for his lunch and said it is delicious. It is spicy!

2 cups of canned chicken or one chicken breast cooked and cubed
½ cup of chopped onion
½ cup of chopped green pepper
1 chopped clove of garlic
2 tablespoons of butter
2 cups of salsa
small jar of green chiles
3 cups of chicken broth
2 cups of water
2/3 cup uncooked rice
1 teaspoon cumin
2 tablespoons hot sauce
1 teaspoon salt
1 teaspoon pepper
1 can mixed vegetables
several drops of hot sauce or in my case...hot spices

This was so easy and fun to make! Just toss everything in a large kettle. First, I usually have my own chicken broth in freezer so I just took it out. Melt butter with chopped vegetables [onion, green pepper, garlic] until tender on medium heat.

Add chicken broth, salsa, water and spices. Stir well and add Chicken and uncooked rice. Turn up heat until it comes to a boil. Then, cover and turn it down to simmer for twenty minutes or until rice is tender.
