Apple Snack Cake [tastes like a brownie]

I had this at my friend Bonnie's home.  She is the pastor's wife and an amazing cook.  She knows the value of keeping expenses down and is a wonderful witness of God's creativeness!  Once again, we do not claim to own this recipe.

Apple Snack Cake (from Taste of Home)

1 1/2 cups flour
1/4 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 cup water
1/4 c oil
1 tsp lemon juice
1 tsp vanilla 
1 cup chopped peeled apples
2/3 cup sugar
1/4 tsp cinnamon

In a medium bowl, combine flour, cocoa, baking soda and salt. Combine water, oil, lemon juice and vanilla; add to the dry ingredients and stir just until combined. Toss apples with sugar and cinnamon; fold into batter. Pour into a greased 8-inch square baking pan. Bake at 350 degrees for 30-35 minutes or until cake tests done.
I doubled this recipe and used a 13x9 pan.
