The rain kept pouring down today.  We got our errands done and decided to stay inside.  However, I felt like doing something.  I always like to mess around in the kitchen but I hadn't felt like grocery shopping in a down pour and my cupboards had an echo from being empty.  So, I went online and looked for some recipes to use what I had to make cookies.  Rainy days are great for kicking back with hot cocoa and cookies.  I came up with zip.  So, here's what I made with what I had in the house.


I took my mixer and a sleeve of saltine crackers plus ten crackers.  I had no flour.  So, the mixer crushed the crackers up fine.
2 cups of crushed saltines
3 cups of oats
1 cup brown sugar [the only sugar I had]
1 cup mayonnaise [I had no eggs either]
1/4 cup of oil [all I had left]
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon nutmeg
a little less than a teaspoon baking soda
1 banana

I just mixed it up and made small balls placed on a greased cookie sheet.  Pressed them down gently with a fork.  Baked for 13 minutes.  Cool for 13 minutes too before touching.  They come out like soft cookies with the taste of banana bread!  My husband loves them!  I think they will go great with coffee this afternoon as we watch the rain.
