2 cups of long grain rice that is cooked according to directions and chilled.
1 pkg instant vanilla pudding
1 1/2 cup of milk
2 cups whipped topping
1/2 teaspoon nutmeg
1/2 cup cherries cut up
1 graham cracker ready made pie crust
1/4 cup flaked coconut, or chopped nuts for garnish.
prepare pudding according to directions with the milk and add nutmeg. Let cool to room temperature. Fold in the cooked and chilled rice and cherries along with 1 cup whipped topping. Pour it into the graham cracker pie crust. Spoon 1 cup whipped topping over it all. Sprinkle with garnish. chill for 2-3 hrs.
You can alter this recipe using cinnamon, or using raisins, figs, cranberries too. This is good for a project after the holidays are over. When you are tired of turkey, and perhaps needing a pick me up after the rush of Christmas. I like to put on some nice music and putter in the kitchen.
