Cinnamon Orange Bread Pudding

This is one of those recipes that I made up in my head when I was dreaming of orange cinnamon rolls. This has a little different taste and it's great on the budget! Don’t throw away your stale bread. You can reuse it in so many ways. Take the heels and freeze them until you are ready to make this recipe. Preheat oven to 350 degrees

13 slices of stale bread [more or less]
1 ½ cup of orange juice or juice of 6 oranges
¼ cup of melted butter
1 cup sugar
2 eggs
½ tsp lemon or orange rind
1 teaspoon cinnamon
½ cup milk

Cut up the bread in small pieces and let it soak for five minutes in the orange juice and milk. When it’s real soggy it’s easier to work with. Add rest of ingredients and stir well. Put in 8x8 inch square pan and bake for 40-45 minutes.

The smells are wonderful. If you like you can drizzle a touch of white frosting on top or brown sugar and cinnamon.

I encourage you to be creative in these days of economic strife. Always remembering my grand parents best recipes came out of the depression. God is with us who call upon His name. Never doubt it.
