Oatmeal, Chocolate Chip, Raisin Snack Bars

Now that the cooler weather is here, my mind always turns to baking. I’ve learned that it’s not so much the eating that intrigues me though. I love to mess around with new recipes and use things on hand rather than follow a recipe. The smells of cinnamon and nutmeg mixed with raisins and my ever favorite chocolate always puts me in a good mood.
Recently, I have been experimenting with substituting applesauce in place of butter in some recipes. It’s lower in cholesterol and sometimes less costly. In this ‘Majestic Manna’ I am going for the less costly to bless my readers with new ideas that both save on the budget and fill the senses with good taste.
This is a snack bar recipe I made the other day. The only problem I had with it was that I kept eating the bars, so I found a way to lose five pounds…I wrapped them up and sent them to work with my husband to share in the break room. I still had the fun of making them, and smelling them and lost the temptation to eat them one after another. They are moist and cakelike. They are also addicting, so I would recommend you make them and give some away.

1 ½ cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon salt [optional]
¼ teaspoon nutmeg
1 ¾ cup oats
¾ cup applesauce
1 ½ cup brown sugar
2 eggs
1 teaspoon vanilla
1 cup raisins
1 cup semi sweet chocolate chips

In a large bowl mix the first six dry ingredients and set aside. In another bowl mix the brown sugar and applesauce and rest of ingredients. Pour into the dry mixture. Spread in greased 13 x 9 inch pan.
Bake 350 degrees for 25-30 minutes.
Let cool for ten minutes before cutting into squares.
