Cooking a Goose

Last week I told everyone how I sent my oatmeal chocolate chip raisin snacks to work with Shermy. They were well recieved and I didn't gain weight from eating them all!

This week, one of his coworkers approached him with a frozen bag of goose! Her husband goes hunting a lot and she wanted to give this to us. I was excited and also a little worried. I've never cooked goose in my life!

I found a couple of recipes and put them together. Here is what I did. First, I rinsed and cleaned the meat removing any left over feathers. Then, I used my slow cooker and put 3 cups of brewed coffee over the goose. I added some garlic cloves and cut up onions. I noticed a lot of grease floating to the top and repeatedly skimmed it off. I let it cook for 3 hours and took a ladle and removed a few cups of the juices. After removing the juice I then added half a cup of lemon juice and a sliced orange. I put the orange slices in rind and all.

The results were wonderful. It tastes just like roast beef! What a surprise to me! No gamey taste at all! In fact, I am making my husband a roast goose sandwich for his lunch...and sending one to share.

Next week I am sending mayonnaise cookies to work with him. This is kinda fun! Did I mention a coworker mentioned that they sometimes shoot ducks and bears?? If I get any good recipes I will certainly share them.
