Macoroni Soup

After spending years eating fast food, and dining out...we are finding that we can't afford it. To add to that, we do not always know how or what to buy. Here are a few ideas.

Given the choice of instant or actual cooking...the cooking is less money. A bag of rice is less expensive than instant. You just need to follow directions. A bag of potatoes is more versatile than instant. Less expensive too. A bag of flour is cheaper than store bought bread. More on that later. Soda tastes wonderful but water is better. A box of instant tea with sugar added is more expensive than brewed tea.

I came to a point in time when I had no choice but to spend as little as possible. It was the best thing the Lord ever did.

This recipe has been in my recipe book since before I got married. Years ago, girls would have a hope chest. I never had one of those. Instead, I gathered recipes. I have no idea where it came from, I know it was from family. I will give the credit to Gramma Gray, but it could have been my Aunt Olivene. They are no longer with us, but I will meet them again in heaven. They are a blessing to this family even though they are no longer with us.

½ cup uncooked macaroni
½ to 1 pound of ground beef
2 cups frozen mixed vegetables
1 can of diced tomatoes
2 cups of water
¼ tsp pepper
1 tsp Italian seasoning, or tsp oregano
Salt to taste

Brown the ground beef till no longer pink. Add 2 cups of water and bring to boil. Turn down heat to simmer. Let beef simmer in water for ten minutes to make beef broth. Add tomatoes, spices and uncooked macaroni. Let cook on medium heat for 10-15 minutes.

Shermy likes this with home made bread!
