I know you’ve heard that folks hate fruitcake at Christmas. I have to laugh because if you go to most gourmet restaurants for breakfast…they serve muffins from the exact same ingredients. Packaging is everything now.
1 ½ cups of baking mix [like jiffy]
1 cup whole bran cereal
1 tsp. cinnamon
¼ tsp salt
½ cup nuts [whatever you have]
½ cup of raisins
½ cup diced mixed candied fruit [or use strawberries, or whatever you have. I even used orange marmalade]
1 egg beaten
¼ tsp allspice
¼ tsp nutmeg
1 cup milk
½ cup brown sugar
¼ cup oil
1 tsp shredded orange peel [if you have it] you can use lemon peel too.
Sift together flour, cereal, baking powder, cinnamon, allspice, salt, nutmeg. In another bowl mix sugar, egg, milk, fruit, oil, orange peel. Mix everything then add nuts. Mix with dry ingredients. This can be stored in refrigerator up to 3 days.
Stir batter and put in greased or lined muffin cups. Bake for 15-20 minutes at 400 degrees
