Mayonnaise Cookies


Oven set at 350 and preheat
Lightly grease cookie sheet, or spray the sheet with nonstick cooking spray
Prepare a small bowl with 1/8 cup of sugar in it and set aside

1 cup sugar
2 cups flour
1 cup mayonnaise
1 pinch salt
1 tsp baking soda
1 tsp vanilla

Mix all ingredients together and form small balls about the size of a walnut
Roll cookies in sugar, and then place on cookie sheet
Flatten with a fork

Bake at 350 degrees for 12 minutes, let cookies cool for 10 minutes before removing from cookie sheet
I like this recipe because the mayonnaise takes the place of butter and eggs. When the cost of butter is high, and most families run out of eggs quick, we usually have mayonnaise on hand. My sister in law Linda and I began experimenting with the use of mayonnaise replacing eggs years ago. I figured, if they can use it in chocolate cakes, why not cookies?
